Broccoli with Mushroom gravy


• 2 cups broccoli, florets
• 1 cup kelp noodles, OR another cup of veggies of your choice

• 2⁄3 cup mushrooms, any type
• 1⁄4 cup olive oil
• 1⁄2 cup water
• 1 1⁄2 teaspoons apple cider vinegar
• 1 teaspoon garlic powder
• 1⁄2 teaspoon Himalayan Salt


Broccoli: Chop the broccoli into small florets If you are using kelp noodles you can soak them
in warm water while you prepare the gravy
If you are using other veggies you can chop them to prepare. You can also use zucchini or another kind of noodle here that is right for you

Gravy: Blend all gravy ingredients together in a high speed blender until they are

Assembly: Pour the sauce over the veggies and noodles if using and toss
Garnish with green onions and mushroom slices if desired

Notes: Use whatever noodles are right for you here and whatever fits your current goals
Use any type of button, crimini or portabello for the mushrooms in this recipe
