Broccoli Soup


– 1 C broccoli florets
– 1-2 T olive oil or flax oil
– 1/2 avocado
– Juice of 1/2 lemon
– 2 T shallots
– 1/4 tsp himalayan salt
– 2 tsp chickpea miso
– 1/8 tsp black pepper
– pinch cayenne
– 2/3 C spring nettle tea


Coat the broccoli in the oil and the Himalayan salt in a medium sized bowl

Massage the broccoli until it takes on a slightly cooked texture

Place the broccoli along with all the other ingredients and a bit of nettle tea (just enough to blend) in your high speed blender

Blend your soup until warm


Serve with a sprinkling of Dulse on top for your soup if you have some

  • This looks really good, Steph. I’m going to make this tomorrow. Broccoli is listed twice, one without an amount on the top line. Is this the broccoli stem or what do you mean?

    • so funny! I guess my assistant made a mistake when posting. So yes go with the second broccoli 🙂

      Never too much broccoli however and I do detest measuring things 🙂

      • Thank you, Steph. I made it today. It was pretty good except I didn’t have shallots so exchanged it with 2 T purple onion. Next time I’d go with shallots or less purple onion, too strong. Other than that it was really good.
