Blueberry Lime Cashews

This recipe can be used as a salad topper as well as a snack for those moments when you are on-the-go but are not willing to compromise on what you are eating

C = cup
T = tablespoon
t = teaspoon

Blueberry Lime Cashews Ingredients

2 C raw cashews
1/2 C coconut sugar/crystals
1/8 t Himalayan salt
1 T fresh lime juice
zest from 2 limes
2/3 C chopped dried blueberries
1 t real organic vanilla powder
2 T warm water

Instructions

Mix the warm water and coconut sugar together until the coconut crystals are dissolved

Add the lime juice, blueberries, lime zest, vanilla and salt

Lastly add the cashews and stir to combine

Dehydrate on teflex sheets in the dehydrator for 8-12 hours or until the outsides are dry to the touch

Flip onto a mesh sheet and continue dehydrating until they are the level of crispiness that you desire, can be up to 12 more hours

*note – I do not use soaked cashews for this because of the moisture
